Pecan Bread

We all love our bread, but I tend to get tired and have gut problems after it. So I try to keep it to a minimum. Having a healthy alternative prepared is the key.I normally bake this bread and slice it up and freeze it – pop a slice in the toaster when I want it…simple.

This will make about 1lb loaf

300 grams ground pecans

1/2 teaspoon cream of tartar or apple cider vinegar

1/2 baking soda

2 teaspoon of cinnamon

4 large free range eggs

1 large ripe banana

2 tablespoon of cold pressed olive oil

1 dessertspoon of local honey ( optional )

Your mixture will look wet – that’s normal

  

Set the oven at 180c

Place in bowl all the dry ingredients and give it a mix

In the blender mix the eggs, banana, olive oil and honey until nice and smooth.

Mix both ingredients together and spoon into a lined tin. Bake in the oven for 40-45 minutes. Check with a clean knife that there is no wet mixture on the knife.

Cool on a wire tray for 5 minutes.
