Sunday Morning Pancakes
It has become a ritual for me on Sunday morning to make my pancakes. I suppose it is the one morning that I have off, having worked 5-6 day most weeks and when you’re a mother your never off duty are you?
I love Sunday morning, you get a small lie in ( depends on who get the short straw to make the kids breakfast ). Also, everything is a slower pace, you’re not clock watching, and preparing for the day ahead. Trying to remember who wants what in their lunch box, who doesn’t like apples and who needs money for dance.
Ah yes, a slower pace I definitely need more of that in my life.So on Sunday morning, I make my pancakes…There are so many variations on pancakes these days, with gluten-free, sugar-free, dairy-free or yeast free you get the picture. My recipes I’m sure is not the original, I can’t even remember where I saw it first and I am by no means a Kevin Dundon in the kitchen. I normally just tweak it to my taste buds, as so should you.
Without further ado here is the recipe I follow
Sunday Morning Pancakes
Ingredients:
1 dessertspoon of coconut oil
2 large free range eggs
1 banana ripe
1 scoop Protein Powder Vanilla Classic
2 tablespoon good quality vanilla yogurt
1 tablespoon of chia, flax seed or pumpkin seeds
1 teaspoon of maple syrup, local honey or agave syrup
Fistful of Blueberries ( optional )
Method:
In a blender pop the banana, eggs and vanilla protein powder. Blend until it’s nice and smooth.
On a pan heat the coconut oil, add small dollops of the mixture, you may just fit 5 depends on the size of your pan. After a few minutes, tiny holes will appear on the pancake, you can now turn them. When they are golden brown remove from the pan and serve on your plate with the yoghurt, seeds, blueberries and syrup.
