Vegetable Soup

1 dessert spoon of coconut oil

1 pint of bone broth or stock

1-2 cloves of garlic chopped

1 leek washed and chopped

1 -2 parsnips  washed and chopped

3-4 carrots washed and chopped

1/2 butternut squshed chopped

1/4 sweet potato washed and chopped

2-3 Bay leaves

Himalayan salt and ground black pepper

In a medium size saucepan heat the coconut oil, add the garlic and leeks. Cook till soft, then add all the rest of your ingredients. Gently simmer for 10-15 mintues.

Remove the bay leaves.

Blitz with a hand blender, add more water if you feel its too thick.

Season with salt and pepper and enjoy !!
